What happens when German Carrot salad meets a New England girl?


What happens when German carrot salad meets a girl from New England?  The answer of course, is that the New Englander puts her unique spin on the salad.
Germans make some of the most beautiful salads I have ever seen.  You will most likely find the carrot salad in a proper German salad, along with a variety of other things. Often you'll find egg, potato salad and a mound of dilled cucumber in German salads. I used to make carrot salad like a New England girl.  I'd throw in mayo, dash of vinegar, salt and pepper and some raisins.

When I saw Oma (our German next door neighbor) make the salad the German way with cream, lemon and no raisins,  I wondered if I couldn't come up with a compromise that would taste nice. I finally hit upon this recipe and have gotten rave reviews when I served it.

Ingredients:

5-6 large carrots
1/3 cup milk whisked together with 3 heaping tablespoons sour cream(Crème fraîche for the British)
1 tablespoon sugar
juice of one large lemon OR two small ones
1/4 teaspoon Lawry seasoned salt OR normal salt
small box snack box raisins (single serving) (sultanas for you British)
raisins are optional

Grate the carrots.  Place your milk, sour cream, sugar and juice of the lemon in a bowl with your grated carrots.  Add your raisins and mix well and refrigerate until you are ready to use.


You can serve this as an accomplaiment to a meal such as baked beans, or you can make a pretty salad for summer.  Be creative when you put your salad together. 

This is just an idea. If I had had radishes I would have shaved them into thin slices and put them in the middle of the plate.
